Dijon Potato Salad (serves 3)

Ingredients :

  • 600 g new potatoes, scrubbed
  • 2 tbsp Grey Poupon Dijon mustard 
  • 1 tsp Grey Poupon Wholegrain mustard 
  • 1 tbsp lemon juice
  • 2 tbsp olive oil 
  • 1 tbsp natural yoghurt 
  • 2 garlic cloves, minced
  • 1 shallot, finely chopped
  • 20 g fresh parsley
  • Salt & freshly ground black pepper

Method:

  • Boil the potatoes in salted water until tender, for about 10 minutes. Drain and leave  to cool. Cut bigger potatoes in half. Transfer to a serving plate.
  • Whisk both mustards with lemon juice and add the olive oil slowly while mixing. Add the natural yoghurt and mix again.
  • Add the garlic cloves, shallot and half of the fresh parsley. Season with salt and freshly ground pepper.
  • Drizzle the dressing over the potatoes and mix gently. 
  • Top the salad with remaining parsley, season with black pepper and serve.
