Ingredients :
- 600 g new potatoes, scrubbed
- 2 tbsp Grey Poupon Dijon mustard
- 1 tsp Grey Poupon Wholegrain mustard
- 1 tbsp lemon juice
- 2 tbsp olive oil
- 1 tbsp natural yoghurt
- 2 garlic cloves, minced
- 1 shallot, finely chopped
- 20 g fresh parsley
- Salt & freshly ground black pepper
Method:
- Boil the potatoes in salted water until tender, for about 10 minutes. Drain and leave to cool. Cut bigger potatoes in half. Transfer to a serving plate.
- Whisk both mustards with lemon juice and add the olive oil slowly while mixing. Add the natural yoghurt and mix again.
- Add the garlic cloves, shallot and half of the fresh parsley. Season with salt and freshly ground pepper.
- Drizzle the dressing over the potatoes and mix gently.
- Top the salad with remaining parsley, season with black pepper and serve.
