ITALIAN FOCACCIA SANDWICH

For making this recipe require 20 minutes for 2 servings, +8 hrs if you wish to make 
your own focaccia bread.

Ingredients for sauce:

  • 4tbsp of Grey Poupon dijon mustard
  • 2tbsp of honey
  • 3tbsp of mayonnaise
  • 1 tsp + 1/2 tsp of lemon juice
  • Sprinkle of cayenne pepper

Ingredients for focaccia sandwich:

  •  Half of a 12”x9” traybake focaccia
  •  8 slices of Parma ham or Prosciutto crudo
  •  200g of scamorza affumicata
  •  Salad leaves
  •  8/10 sun-dried tomatoes

Method:

  • Cut in half a 12”x9” traybake focaccia, and divide that part in half again, making 2 
    sandwiches
  • Prepare the sauce. Mix dijon mustard, honey, mayonnaise, fresh lemon juice and 
    cayenne pepper in a bowl and set aside
  • Slice the scamorza affumicata and place a frying pan over a medium heat. When is warm, place the scamorza slices over the pan and cook until the cheese is melted.
  • Assemble the focaccia sandwiches. Spread the mustard sauce on the bottom 
    focaccia and top with salad, prosciutto, sun-dried tomatoes and scamorza 
    affumicata. Repeat the same for the second sandwich and serve.
